Recommendations for a VT lab?

Getting ready to spin up a new toy:
circa ~2005 SMB server
8 cores x64
12GB RAM DDR2
Two 500 GB RAID drives

Never built anything like this before. Current ideas:
1) Ubuntu 16 server, headless NoMachine, headless VirtualBox
2) Debian 8 bootstrapped to an x86 Xen install (not sure what tool to use to remote in to that?)

I'll use it to spin up dif configs for attack/defence sims, spin up small nets to practice for exams, etc.

Suggestions welcomed.

Thanks!

Take a look at Proxmox - its a debian+KVM -based virtualization solution with simple setup and nice web interface for management.
