The choice really is up to you, whichever one you feel comfortable with is good. I have OpenVZ running on a Debian Squeeze 64-bit system with 32 cores and 32 Gb RAM and it runs smoothly. I think CentOS is 'everywhere' because it's the free clone of RedHat which has a very good name in the enterprise market.
