you deleted /dev/dvd? that should be no problem as it's just a symlink (in rh 7.3 anyway). and creating a symbolic link to /dev/cdrom1 should be fine provide /dev/cdrom1 points to your dvd device. just recreate the symbolic link and make sure /dev/cdrom1 indeed points to your dvd drive.

as for as enabling dma, you need to log in as root (for rh 7.3 you do other distros may let you su into root) and use the command:
hdparm -d1 /dev/hdc
that will enable dma. just make sure /dev/hdc is your dvd drive. if you want to enable it automatically at boot, you'll need to put that command in a start up script.
