Another question with no real answer and likely to get a lot of responses!

Personally, I stick Debian onto webservers when building them as it's very stable and one of the most secure. For a webserver, you don't need any fancy graphics, massive hardware support for digital cameras and the latest release of KDE or Gnome. Try out different distros until you find something you're comfortable managing, as once setup, you shouldn't be doing much other checking log files and installing security updates. Don't be swayed by massive packages included with distros or latest 'x' feature. You'll only have command line, Apache, a database service like MySQL and maybe some tools to manage things like phpMyAdmin.

Try out some different distros, but generally I'd stay away from those such as SuSE, Mandriva, Fedora (although a lot of webhosts tend to use them...), etc. and look at Debian, Slackware, etc.

you can even make win95 act like a webserver...
you could also ask: which hairdryer will dry my hair best?

linux generally does not take much power to run... you can install linux on 386's... tell you something: any linux distro can be a webserver... pick a few, try them, see which ones you are more comfortable with.
i personally love debian and gentoo and hate suse, redhat (fc)... and that is just my personal opp.
before i ran linux i used to run apache, php4 and mysql for dev. purposes on win98 and win2k
take your fav linux distro and it will be the best for you :-)
if you dont know your fav distro, asking others will not help you, since you need to find your own linux style....
debian does it for some, freeBSD for others, gentoo for a few geeks (it's not that bad, really), and suse or fc for others again
find your own tast - you will def. not be using your flavour of choice alone...
and if you should run into any other probs - it's linux... we will all be able to help our some way or another :-)
