The whole macromdeia Studio would be nice to have in linux. Also 3d modeling programs like 3dsmax would be useful as well. I can't really complain though because most distributions come pre-installed with software for almost everything you need to do - and its free unlike Microsoft.
I'd like to have the usual graphics and sound applications that many people have already commented. But in some ways, for those you can have (ideally) a dedicated machine or a windows partition for when you are working that stuff.
The application I really miss in Linux for everyday use is POWERMARKS, an online/offline, keyword-based bookmarks manager. I'm not a programmer, so it looked a relatively simple piece of software to me and thought I could find an alternative for Linux. But I couldn't. Maybe I should start thinking about programming?
Delorme Street Atlas and Topo using the GPS so I can get Windows off my laptop.
Digital video capture, editing and DVD burning. Using Pinnacle Studio 8 on W98 now.

Oh yeah, I would indeed pay extra for them.. They are great programs, and the more I can do in linux and the better things work for me the more I will use linux..
Definitely my top pick would be Microsoft Outlook (I'm stuck using an Exchange server for e-mail). However, vector graphics packages such as Adobe Illustrator, Macromedia Freehand, etc. would help fill a gap since there isn't really a vector graphics equivalent to GIMP.
MSN - Kopete or Gaim. They both work as well as MSN
Outlook. Oh dear why? It's the only mail program to allow email viruses, and Thunderbird, as well as normal Mozilla Mail are both much better. I think that the only programs which need to be ported to Linux are those for which there is no viable Linux alternative.
