What Mail Server

I am wanting to replace my current Windows NT mail server (using the Microsoft SMTP service for SMTP and a program I wrote about 6 years ago for POP3 for the POP3 side) with a Linux server.

I of course do not want to have it be an open-relay. I want everyone within our local network to be able to send e-mail out to the internet through the mail server. That part is easy since most of the mail servers I have looked at allow you to specify a range of "trusted" IP addresses. But, I have one user using a SprintPCS connection to the mail system who needs to be able to connect his laptop to our mail server through the SprintPCS network. I don't want to trust the entire SprintPCS system, I just want this one person to be able to logon to the SMTP server to relay mail. Can someone tell me how this is done? Also, the server has to be able to receive mail from several different email.domain.com addresses which I think is also fairly easy since it appears in Postfix that you can list the domains for which the server receives mail as a destination.

Currently I am looking at Postfix and Courier-IMAP. I have seen how to setup the trusted IPs on Postfix, but is there a function like on Microsoft SMTP server where you have the option of logging on to the SMTP server and being authenticated so you can relay mail from outside our LAN?
