what are the best packages for these tasks and are there any tutorials on how to install them?

I have no idea how to install SSH, any tutorials? and whats the best POP3/SMTP server so i can make it a mail server aswell? whats the best IRC server so i can have my own? and tuts to install it?
for mail i would say: postfix, documentation at www.postfix.org. it's pretty easy to work with. i've never done an IRC server, sorry. i believe there are some SSH links in my bookmarks you could check out, or search google. it's relatively easy. gl
