Video capture of screen(s) - which software is recommended (stable and good features?)?

I've looked at a number of pieces of software and have tried VLC but it seems a little difficult and lacking compared to some other descriptions I have looked at. I have 4 monitors currently and often only need to record one and VLC was recording all and I couldn't change it. There may be times I need to record all monitors or some, and in those cases I could open multiple instances for each area if needed - I'm not expecting miracles for that aspect.

If anyone has experience with any of these, I'd like to hear your opinions. I basically want to be able to record processes for software tutorial and record website browsing for documentation (load many pages then scroll through each showing information in a sequence). I don't intend for real video recording or recording game play.

Does anyone have something they would highly suggest?
