KDE - nice desktop
Gimp v2 - great substitute for Adobe PS once you get the hang of it
Open Office - good office suite
Gaim - I like Kopete's potential but it's not there yet
Firefox - I really think I'd like this but I can't get it to run for whatever reason
K3b - had a little trouble with recording DVD, but it's most likely operator inability
GnuCash - ORGANIZED MY FINANCIAL LIFE
Kcalc - very good somewhat customizable calculator
Xkill - saves lives by killing evil programs
Kontact - who needs Outlook?

Well, it's kind of hard to think of specific programs that I couldn't live without, because there are often several good solutions when you're running linux.

A couple I can think of that are extremely useful to me are:

X, rpm, yum, make, xmms, mplayer, xine, firefox, k3b, and vim.

I use XFCE4 as a desktop, but I think there are atleast five window manager/desktop suites that I have tried and found to be satisfactory.
