the redhat 'start' button

Hi,
I don't know what the 'redhat' symbol is called that resides in the place of the Windows 'start' button, but can you edit it : i.e. change it to another icon?

Also,I installed some screensaver that put a load of linksI don't want on the start menu( in the EXTRAS/SYSTEM TOOLS branch) .How can you delete links from the start menu?

cheers
Ludwig

PS using gnome on RH8
