Setting up a postifx email monitor

I need to setup a way that will carbon copy emails going in and out of our mail server to a special email account that is used to monitor these. I've done some searches and have come up empty. But it's very possible that I'm using the wrong key words. I'm using postfix, and MailScanner for email.
Thanks any help would be great!
