check into mencoder and trancode, they both can rip audio from a dvd. You may need to use another program to rip the dvd.

ripping audio from dvd

I had the same question a while ago and someone told me about using mplayer.
mplayer -vo null -ao pcm -aofile audio.wav dvd://01
\____ name you give audio file

You can stop it anytime if you only need a few minutes of the audio. Hope this helps.
