Check your setup against

This is what I used to setup qmail when I was first learning it & found it to be excellent. I first tried Life with Qmail but found qmailrocks to be much easier to follow. In particular check your /var/qmail/supervise/qmail-smtpd/run against qmailrocks' one.
If you restart qmail with qmailctl restart does qmail-smtpd still take longer than the others to start?
As for "Evaluation" (which I think you really mean "Evolution") not being able to get a proper greeting from your pop server, try the "mail" command on the same box that qmail is running on & see if that gets thru to a users mail box. Do this by :

The dot ends the text input to the body of the email, then when it asks "Cc:" just hit enter then have a look in the users .Maildir directory & see if the message is there. If it is then the problem is probably with Evolution.
Have you tried sending & receiving mail from a different PC running windows?
