Mozilla 1.7.3 - switching between language packs

I now have two language packs installed on my Mozilla Application Suite. The thing is, I don't know how to switch from one to the other. English/French. Both show up as languages under Preferences/Appearance/Language Content, but the browser is still in english and I can't switch it to French.

Does anyone out there use multiple languages with their browser? If so, can you tell me how to switch between these two?
