Is there a way to stop the creation of backup files in KDE?
 
or to simply hide them?

I don't think that there is an universal KDE switch to turn off all backup files. Each KDE application which can create backup files has an option to turn backup files on or off. I have all backup files turned off but I turned them off application by application.

You could set up a cron job to periodically delete all files which end in extensions like .bak or .old.

When I make a new text file it makes a backup file, How do I stop that or hide the backup?

As mentioned above, how you do this is application specific so look for the option to diable backup files in the text editor you are using e.g. in KATE its Settings -> Configure KATE -> Editor -> Open/Save and untick the options for backup files.
