where does gnome-system-log get the list of logs that can be displayed from? as you add additional logs to the list where does it store these for use next time?

When you open the viewer up, you can use the file > open menu entry to add additional files.

Conversely, you can use the close menu entry to stop files from opening the next time you launch.

You can also launch with gksu to be able to view any files that you may not ordinarily have the privileges to see.
