How to prevent a service from starting

Suddenly, a RedHat 3EL server will not boot. The boot sequence becomes arrested when it tries to start NFS.
How can I intervene to block it from trying to start NFS?
Thanks

My preference is to do these things with chkconfig.

First have a look at
Code:
chkconfig --list | grep nfs
because there is more than one nfs-related service.

After identifying the ones you want to disable, you can use:
Code:
chkconfig -set nfs off
