To change from gui to text boot, cd to /etc and edit inittab and change the 5 in line that says id:5:initdefault: to a 3.

If you don't want to boot directly to the command line all the time, you can get there from the GUI by opening a ternminal window and typing "init 3" or "telinit 3" (no qoutes). To get back to the GUI, just type "startx". Typing "start kde" will start X with KDE as your desktop; I'm not sure what it is for Gnome.

For info regarding X resolutions, see my response in this thread.
