How many NFS partitions can be mounted?

Just out of curiosity sake, whats the limit to NFS partitions that can be mounted?

In most cases, Linux does not have arbitrary limits. You can mount as many NFS partitions as your network and CPU can handle, probably a few hundred depending on how much you use them.
