wow, this looks like a very well informed little thread ;-) using grip i'd say use the internally linked mp3lame encoder with cdparanoia, with paranoia disabled (and extra paranoia and scratch repair etc.. if you want it to go even faster) after that there's precious little to configure. IMHO it's an extremely straightforward and self-explanatory little program to use.
why do you need to rip them with cdparanoia..? i thought you were using grip??
Please don't take this the wrong way, but you seem to have an aversion to reading documentation. online forums are not a replacement for documentation, but here to help you to get over any issues not tackled by any documentation. the cdparanoia manpgage gives a fair few examples of ripping from CD's.. IF you want to use it yourself. grip wraps it very well though. and of course where the ripped files go is down to your configuration inside grip. on the config tab suprisingly enough.
