In my distribution, Slackware, the logo is in /usr/share/pixmaps and is called gnome-logo-icon.png, or gnome-logo-icon-transparent.png, I can't remember which at the moment. Rename one of those to save it as a backup, then name the file you want to one of those names. Kill the panel, and your new logo will show. When you kill the panel in Gnome, it will re-start itself.
