Talking Edit/Modify the Ubuntu Installer, Ubiquity

Hi Guys,
I was wondering how I would be able to modify/edit the Ubuntu installer, Ubiquity, so that whenever I boot up the Ubuntu LiveCD (for example, version 7.10 LTS), and click install, I can choose which packages I want to install. Would anyone like to help me, or know any internet guides/books, or know from experience how to do this?
