Edit Gnome2 Mime Types by hand

Does anyone know what files I have to edit to alter mime-type::application associations in Gnome2? (I haven't installed the full Gnome install... just the libs I need to get some apps running so I don't have Control Center).

Any help / hints is appreciated.
