Draw professional schemas

I can't seem to find professional(-like) software to draw schemas.
I need to draw big black/white clean schemas of functional blocs, data buses and lines, with printed labels on elements, to represent a system (not electronics).
Currently i only found fancy colorful, featureless, programs.
I perused half sourceforce!
