I work for a school district and have a working Samba/CUPS print server. I would like to add a nice logging/monitoring service to this server - one that can be accessed by non-tech staff (librarian, principal, etc). At a minimum I need it to keep track of who, what, from where, and when details abotu a print job. Ideally there would be a small image of the print job accessible as well. the stock CUPS web interface is "too complex" for them - I need something very simple. Does anyone have any suggestions on what I can put together to meet this request?

The default CUPS interface is simply a web page showing the completed jobs, with all the information you are looking for. Rather than ask them to navigate the CUPS administration pages to get to the information, why not simply give them a bookmark to the "Completed Jobs" page:
