1) What will be the best mail server to install on a server?

Sendmail comes to mind, as does
Postfix

2) Openoffice is supplied with redhat, are files compatible between openoffice and ms office? If not, what application will open them?
|
OpenOffice will open
most MS Office files. Some MS files with fancy features don't open correctly though, but most have no probs. OpenOffice's native fornat is XML which MS doesn't like, but OOo can write in MS Office format if required.

3) Is there an emulator for linux, that will allow you to run the odd one or two windows applications?

Wine can handle some MS progs,
Codeweavers Crossover Office can handle stuff like MS Office, Dreamweaver MX etc, but it's not free and
Transgaming's WineX can handle some MS games, but is also not free (although they provide the source free, but it is feature limited I believe)
