OPTIONS is a request method. Other methods in HTTP are GET, HEAD, POST, PUT, DELETE, TRACE and CONNECT. There's other protocols that add more (WebDAV and DeltaV, AFAIK). If the OPTIONS method isn't used by some application (dunno) you can deny all methods except those you use by using Apaches rewrite engine, looks something like:
