I've done this type of thing before. a few questions though:
1) where is the music going to be stored?
2) will the stereo computer have a screen or not?
3) how do you want to control the stereo? (from the keyboard and mouse, ir remote or wifi device)
iTunes sharing doesn't work well (or at all) with linux I'd avoid it if at all possible.

"The music will be stored on a remote device" - what exactly is this remote device? does anything else need to get at this music?
"the machine will have a screen. however, i don't intend to use it The stereo will connect with an audio jack." - So the whole laptop will be hidden? controlled remotely from the remote?
"The machine will be controlled remotely from a wifi device" - what wifi device are you using? (I use an iPod touch)

I think that you may have the wrong end of the stick.... I am storing the music on another PC. my dads for that matter. Running Win XP, The whole laptop will be completely hidden yes.

maybe something like samba to share the files, something scriptable to play the music, and something similar to what I use as a remote. I've got an apache server running on my media pc it serves some simple html and bash cgi scripts that control mplayer. this is all tied together with some graphics I made in gimp to make a nice touchscreen remote out of my ipod. it only does video but it could be adapted to do music as well.
