I think main.cf looks OK. Restart postfix, and send yourself an email. There should be a file of some sort in /var/mail/..../test that includes the mail you sent if it works. If not, look at your maillog and post the relevant parts here

This is the key.
I just had a play with a test account, and although this doesn't quite tie in with the instructions on the postfix site, this works
Basically smtp is for mail between servers (so in your case consider it sending). POP3 is like your ISP offers - every now and then you download messages to your local mail system (outlook, evolution, etc.). IMAP is where you leave the messages on a central server and read them locally (again with outlook, evolution, etc.), but messages stay on the central server.
It's probably best to relay through your ISP. Use the relayhost statement in main.cf for this. You will effectively need both, something has to deliver the mail to the POP.
Something like dovecot (and others) simply sit between the mailbox (that mbox file) and your mail agent (evolution, etc.)
