Hi,

Hoping you have set up correctly your /etc/fstab, you will need to restart your machine to see the effect of the new options on the root partition /.

You can't remount the "/" partition while the server is running ( assuming you have installed the OS on that partition, in which i don't know how you didn't ). You can only unmount a filesystem when all filesystems mounted underneath are also unmounted, it would mean unmounting all filesystems below it. Reboot your server to accomplish a remount of /. Ensure fstab is configured properly before hand or you could be hosed.

I think it's the "-r" that's stopping you (and why would you want / mounted read-only anyway?).

If this works the problem isn't about remounting as such.
Code:
mount -o remount,noatime /
