It doesn't make sense to me to ask for a video tutorial for a textual environment. It's easier to read documentation than it is to watch a video because you have an overview reference of commands.
Perhaps this is
a better tutorial for you. You could also google "irssi cheat sheet" and look through the results.
Like most command line utilities there is also built in help documentation. (run these commands within irssi)
