need temporary mail server

I have a customer with an exchange server that is currently on an ESXI host. We are going to convert this host to Hyper-v. I need a temporary mail server to catch email during this process and then relay the mail on to the exchange server when it comes back online on the new host.

Will Postfix do this? or if anyone has other thoughts?

Postfix will do this for you. I have used this same concept a different way. We have mails that go to a specific host to be held so that we can look at the headers to make sure things are as expected. So I am sure that this would be possible for you to do. You will just have to estimate how much mail you would be getting and make sure to have enough space to store it during your outage.
