All Linux flavors are made from Kernel + Base packages + other software. Mail server is software that do particular job. Various mail server products with different pluses and minuses in features suit for different situations. Any working Linux flavor that having latest kernel and mail server software plus minimum other packages (needed for function as OS) should exactly match to you. Minimum other software means lower possibility for vulnerabilities.
