- What IMAP server software is used?
- How is email stored: MBOX or maildir format?
- When approximately did the problem start?
- Does or did the IMAP server go through upgrades, reconfiguration or show logged errors?
- Does the problem occur using any non-mcrsft IMAP-capable MUA?

If your mail account is accessed by using the POP3 protocol instead of IMAP, then the mails will be downloaded to your local PC and deleted from server, unless explicitly set to keep it on the server for some time. When accessing the mail server via IMAP protocol, then the default is to keep the mail always - though it is certainly possible here as well to switch the default behaviour and delete the already read mails.

I suggest to check your account settings in Outlook to make sure that the IMAP protocol is used.
