Ethernet delay

Hi
I have two redhat servers connected togheter with a 1Gb switch.
When I ping each other every 20 seconds the ping goes to 40ms and after couple of seconds it goes back to <1ms.
The queue is 0.7 at most.
What I should check everything seams correct

Thank you

Connect them with a crossover cable to determine if the symptoms are caused by the servers or the switch?
