Centos remote setup, how to?

Hi
I'm a bit new to linux, so hope you can understand my difficulty.
I recently got a remote server with Centos minimal 64bit.
I've seen that partitions are not as I need and that there is no LVM wich I need. The server is unmanaged and I can use a rescue system to set partitions and LVM. The rescue system is ubuntu.
I've set partitions and LVM as I need (hoping to have well done).
But when I restore Centos (via web interface) the setup remove all partition and restore original with no LVM.
So I think I need to make a manual installation. But I don't know from were begin as the server is remote and don't know if it is possible to do this via ubuntu.
Anyone can help, please?

it looks to me as if you do not have total control over your server ? is it a virtual machine ?

Hi, no it is a dedi server. I can select my standard OS and the system setup this. I have Centos, I need LVM. The tech support say it is possible (knowing hot to) via recovery mode (a live ubuntu system) but that they cannot do, as the server is completely unmanaged.
So I've removed old partitions and created new with fdisk /dev/sda
I setup 2 partitions (the second set to 8e Linux LVM) and after I set PV and LV.
After this I've setup the OS using web interface but the system reset all and restore setup partitions.
Probably the setup search for something and don't find it?
So I think that I have to manually setup Centos but I dont't know how to proceed.
