can i just copy/backup postfix mail queues in /var/spool/postfix and paste that folder back in after i done migrating all users and mails to a new mailserver?

paste? Odd language. I presume you mean something like tar it up and then untar it on the new server.
As long as you shutdown postfix, back it up, then recover it to the new system, and then start up the new postfix, you should be alright. If you have an active mail server, backups can be a pain, because you typically don't want to shut down the mail server, and the mail files are constantly being updated. I'm presuming if you are running a postfix server you know what else you need in the way of configuration files, etc.

Sounds like you should be alright then. Although you have to look out for all the little details in this kind of server migration.
For the final step, be sure to shut down Postfix, transfer the mail spool files to the new server, and then start up Postfix on the new server. If you try to do that transfer without shutting down Postfix, the files will be changing while you are trying to transfer.
