Use a cron job and set "shutdown -r now" to run at a time thats convenient for you.

Why would you need to reboot this everyday? There should never be a reason to reboot a server unless there's a kernel upgrade or hardware replacement.

Memory being full should not be a problem, as Linux utilizes memory management. Now if your finding issues with the box as if nothing is responding or working cause memory is full, that means you have a hardware problem, most likely with your memory that you should address instead of just rebooting everyday.
