I'm also curious to know who told you that it couldn't be tracked. Take a quick search of Google (voip tracking, voip phone tap, etc) and read all the papers written on it. VOIP is fairly easy to track, listening in is just more difficult than what you would traditionally encounter on a normal phone network. It becomes just as easy or easier to tap than a telephone if you can get even short term access to one of the computers.
