but I don't get the $IPTABLES thing most people use.

It just keeps you from having to type the full path to the binary every time

put this at the beginning of the file

#!/bin/sh

then to set it up do this
/etc/rc.d/init.d/iptables stop
/etc/rc.d/rc.firewall
iptables-save > /etc/sysconfig/iptables
/etc/rc.d/init.d/iptables restart
