But, the question is...just WHAT can they get from the spaces between keystrokes anyway?

An analysis of your typing style which can be used as an additional layer of authentication.

Consider an (extremely) simplistic example:

If it normally takes you X time to type in your password and you type it in s.l.o.w.e.r or faster then it may not be you that's doing the typing.
If the time is outside a predefined range then prompt for the password again.
If it's still consistently outside the expected time range then prompt for a second factor authentication.
