They are window managers, i.e the programs that make desktops and icons and all the point and click graphics possable.
Gnome and KDE are the two most populer window managers. KDE is a bit more windows like, so you might find it easier to use and get used to things.

Just what uteck said, however I find that GNOME is cleaner looking and faster. I have tried both and finally settled on GNOME over KDE.
