What apps installed
 

Is there anyway to list what appications are currently installed in gentoo and also if I compile all my apps is there anyway to get a listing of those also

You emerged gentoolkit? Several tools for that there. If you make an ebuild for compiling it, you add that ability.

A good text file helps me as well.

yum (just now trying, I like apt4rpm better so far)
Red Carpet (Red Hat 7.3. down)
apt-get (apt4rpm FC1)
portage (Gentoo's emerge, my current favorite)
