All linux distro can do as you want. As for gui they all can have guis or many different types ranging from KDE, Gnome, Fluxbox, Windowmaker, and many others. Now what you would be after a gui tool that can configure the server config files. Each distro do their own gui tools. Some have them some may not. They have their own special addons. You can use google to find extra config tools that can be installed on many distros to configure them as needed. One of the more popular one is webmin. Default webmin can do all the above plus if using other servers than the default there may be thrid party addons.
For grub it might help to fully explain the issue and what you want. Post info like the grub.conf file contents pointing out what you have and what you want. Also posting partition table and what each one is and what you wish to have out of it. Not sure why you would want grub on the second drive. To me the first drive MBR is where I place mine. Are you somehow swapping drives on the cable or through bios to make the other first or something.

I always perferred Redhat type distros. Current would be Fedora or Centos. Debian based distros are said to be more secure. For a server it runs better with no gui running. For a gui I use KDE and fluxbox sometimes of light systems. I myself do most config changing in the terminal console and edit manually.

I tried typing into the terminal "sudo apt-get install webmin" and it told me the package is not available, but is referred to by another package. What do I need to type to install what I need for the services I mentioned in my first post?
