It depends. If you are using packaging tools, then they tend to automatically remove the old one first and then install the new one. You don't have to remove the old one manually. If you are comiling from source, then its a good idea to uninstall the old one (once the new one has been built successfully of course) and install the new one. There is no need to do this, but it helps minimise the number of unnecessary files accumulating on your system.
