Ubuntu customizations, the little stuff that makes life happy.

Ok, I'm new to Ubuntu and there are some little things that I just can't figure out how to do. Can a guru (or two) explain some of these simple easy things that I would like to know how to do?

1) adding programs to the Applications list.
- I want to add an application to the list, (note: this is not the "add/remove" facility, I've already added the application) For example I added Gvim but I'd like to be able to start a Gvim edit session by clicking on the Applications tag in the panel, get the drop down list, and arrow over to a new entry "Gvim text editor." How do I add/delete/organize those drop down lists?

2) desktop icon/panel icon how to create.
- similarly how can I make an icon that I can drop a text file into so that the application opens the file?

3) Nautilus file manager question: those really big buttons.
- can I make them smaller?

4) Nautilus file manager question: Right click on a file and its list of options how can I add/delete options
- I've got the "open with..." down pretty good, but I'd like to add other headings, for example for an html file I'd like to have when I right click options, display, open with gvim, open with openoffice, touch, ...
how do I add them?

TIA,

p.s. this thread can be a good resource if there are other things people would like, feel free to add them.

Not sure about the others, but go to System->Prefrences->Main Menu
