Arrow switching languages in red hat 8.0


Does anyone know how I may be able to switch between languages in red hat 8.0? Is there an "alt shift type" key combination anywhere? My default system language is english(us) . I have chosen a greek keyboard from system settings, but i can't figure out how to enable it when I write a text in openoffice! Thanks!

from the gui menu: "system settings->language" you need root password.
