That is largely a matter of personal preference. Mine is Postfix. Postfix is quick, and easy compared to Sendmail, but it is still feature rich.
If you want to add spam filtering check out Spam Assassin, if you want to give users the ability to rescue and correct mis-identified mail from the spam filtering check out Maia Mailguard.
