Running a program/script from receipt of an e-mail

Is there a way I can call a program from the receipt of an e-mail? For example if someone sends an e-mail to "test@myserver.com" I want a particular script or program to run.

I've tried aliasing the email to the script but it doesn't seem to be working. Is there another way to do it? Or what is the proper alias syntax?

Thanks

Perhaps you could tell us what SMTP server you are using?

I assume you have root access to the mail server?
