RAID setup for fileserver

Hi,

I've never used a RAID system before and I would like to build a fileserver with a (software) RAID 5 setup.
Currently I have a 200GB disk with all the data I would like on the server.

I understand I need 3 disk's for RAID 5 ?
Should I first create a raid device (with 3 new disks) and then transfer all my data from the original disk ?
And afterwards add the original disk to the raid ( wich would increase the total volume ? )
Or can this be done with buying just 2 new disks ?

You would need 3 hdds for this.
if you just want to mount a /documents or something as raid you could do it by getting two new hdds and you need to have some unpartioned space on the present hdd.
I dont think its possible to make your current file system to raid 5. I might be wrong!
